Coconut Flour Donuts

Donuts are amazing but also heavy and a sugar bomb. I found this recipe once and loved it since I could make fluffy and yummy donuts out of coconut flour and bake them in the oven. I could also adjust to the sugar level I wanted to be conscious of what I am really giving to my body.

Ingredients

For 6 donuts:

  • 1/2 cup coconut flour

  • 1/4 cup coconut milk

  • 1/4 cup cocoa powder

  • 2 tablespoons of melted coconut oil

  • 3 eggs

  • 1/2 teaspoon apple cider vinegar

  • 1 teaspoon baking powder

  • 1/2 teaspoon vanilla

  • Dark chocolate to melt

  • Shredded coconut/sprinkles

  • Preferred sweetener: organic stevia/monkey fruit/date syrup

equipment

  • Donuts mold

  • Oven

  1. Preheat the oven to 180° C

  2. Add the eggs, coconut milk, sweetener to taste, cocoa powder, apple cider vinegar, vanilla and salt to a bowl and mix until the cocoa powder is dissolved

  3. Grease the donut cold with some coconut oil and add the remaining oil to the batter and mix well

  4. Add the coconut flour and baking powder, combine well and transfer the batter to each donut hole. Use the back of a teaspoon to smooth the batter on the surface of each donut

  5. Bake the donuts for 30 mins

  6. Allow them to cool completely and dip them into melted dark chocolate from one side and decorate with sprinkles, coconut rappel, or more cocoa powder

  7. Enjoy fresh or keep them for up to 3 days
