A great starter or side dish that always goes well. Soft, moist and nourishing for my body. They can be cooked in a batch and refrigerated or frozen to enjoy later.
Ingredients

1 medium zucchini

2 medium carrots

1/2 cup oats/chickpea flour

1 egg

1 teaspoon baking powder

Chives

Plain yogurt

1 lemon

Salt and pepper

Olive oil
Equipment
Manual grater or food processor
Strainer/ cheesecloth bag

Grate zucchini and carrots manually or with the help of a food processor

Strain the grated zucchini and carrots to release excess moisture

Add the vegetables to a bowl and combine with the flour, baking powder, salt and pepper. Add more spices if desired

Beat the egg and add to the mix. Combine well

Grease a pan with some olive oil and add the batter with the help of a spoon to form the fritters. Cook for some minutes and flip them. Fry until golden

Mix the yogurt with some lemon juice, olive oil, salt, pepper and chopped chives

Serve the fritters with the yogurt dip
