Oats & Coconut Protein Pancakes

I am the sweet breakfast type and have always loved pancakes. Looking for healthier alternatives and trying out so many different recipes I finally developed my own way to make them as fluffy, soft, and yummy as I wanted while adding fiber and nutrients to my plate. Oatmeal is a complex carbohydrate that will satisfy you for hours by slowly releasing its sugar content into the blood. You will be happy and satisfied after this breakfast 😉


Ingredients

2 portions – around 8-10 pancakes

  • 2 eggs

  • 1 cup of oats (gluten-free if preferred)

  • 1/2 cup of coconut flour

  • 1 cup of preferred milk

  • Coconut oil

  • 1 teaspoon of baking powder

  • Ground cinnamon/vanilla

  • Preferred sweetener: organic stevia/monk fruit/date syrup

  • 1 cup of blueberries

  • Plain yogurt and honey to serve


  1. Mix oats, coconut flour and baking powder with the eggs, milk, and 1 spoon of melted coconut oil in a bowl. Combine well

  2. Add sweetener to taste and the cinnamon, vanilla or other preferred spice

  3. Let the batter rest for a few mins and then add the blueberries

  4. Heat a bit of coconut oil in a nonstick pan and drop the batter with the help of a spoon forming the pancakes. I prefer to make them small, so they are easier to flip

  5. Let each pancake cook for some mins and then flip with the help of a spatula. Cook until they are golden brown

  6. Form a pancake tower and serve with yogurt and honey. The decoration is key, get creative here 🙂
