Shrimp Ceviche

“Ceviche de camarón” is traditional from the Caribbean Colombian coast and can be found normally in local restaurants or directly on the beach where street vendors prepare it freshly. However, it can be easily made at home with not so many ingredients. Here is how I do it:

Ingredients

4 portions

  • 500 gr. shrimps

  • 1 red onion

  • 1 garlic clove

  • 2 lemons

  • 50 gr. tomato sauce

  • 50 gr. mayonnaise (can be replaced with greek yogurt)

  • Olive oil

  • Coriander or parsley leaves

  • Chilli flakes (optional)

  • Salt & Pepper

  • Soda crackers

  1. Clean the shrimps removing the dark vein if necessary

  2. Cook the shrimps for 6 minutes in boiling water. Once cooked transfer to a bowl with cold water and ice cubes

  3. Chop finely the onion and coriander/parsley leaves

  4. Mince the garlic and juice the lemons

  5. In a bowl combine the lemon juice, onion, garlic, tomato sauce and mayonnaise (or greek yogurt) and mix until a homogenous sauce. Add some olive oil if needed and salt & pepper or chili flakes to taste

  6. Combine the cold shrimps with the sauce and serve with some coriander/parsley leaves and soda crackers
