Cashew Cookies

I like to use everything in my kitchen aiming to have less waste as possible. After making my first cashew milk I didn’t know what to do with the cashew pulp leftover and decided to experiment to make cookies. I crave crunchy things and cookies are the perfect snack or dessert for me. I have tried all the flavors and combinations that have come to my mind (as I make cashew milk at least once a week!) and still I am not tired of these cookies. Here I show you one idea: pistachios and raisins <3


Ingredients

  • Cashew pulp

  • Rolled oats or oat flour

  • Handful of pistachios

  • Handful of raisins

  • Preferred sweetener: organic stevia/monk fruit/date syrup

Equipment

Oven


  1. Preheat the oven to 180°C

  2. Add cashew pulp, oats, pistachios, and raisins in a bowl and combine well

  3. Add the preferred sweetener to the batter

  4. Form small cookies and place them over baking paper on a tray

  5. Bake in the oven for 15-20 mins

  6. They can be consumed over a few days!
